Neapolitan is a traditional pizza dough, like you would see at a wood fired pizzeria, a thin base with a pillowy, bubbly, airy crust. It will cook well in a home oven and will perform best at the hottest temperatures you can get, or opt for a NY style pizza cooking at a slightly lower temperature.
